Food Handling Basics

ITeC Academy’s SITXFSA005 – Use Hygienic Practices for Food Safety course provides the essential knowledge and skills needed for anyone working in a food handling role. Designed for staff who handle food under supervision, this course is ideal for those employed in cafés, restaurants, canteens, supermarkets, catering businesses, sandwich shops, fast food outlets, or food service areas in hotels and bars.

Whether you’re preparing raw meat, serving ready to eat food, or storing cold food and hot food, you’ll learn how to follow food safety standards and protect your customers from food-borne illnesses. You’ll gain a solid understanding of food hygiene, the importance of personal hygiene (including when and how to wash your hands with soapy water), and how to keep food safe during storage, preparation, and service.

Safe Handling of Food

This food safety training course covers how to safely work with raw food, frozen food, and cooked meat while avoiding cross-contamination. You’ll learn to correctly use cutting boards for different food types, monitor food temperatures, and implement correct cleaning procedures to avoid spreading bacteria. You’ll also explore common risks associated with high risk foods and how to read and follow cooking instructions for food safety.

The course aligns with Food Standards Australia guidelines and your local food authority regulations, providing you with the tools to meet national food safety obligations. Whether you’re working in a large commercial kitchen or a smaller venue with limited food prep space, these skills are essential for maintaining safe food practices.

Food Safety Responsibilities for Food Handlers

This unit applies to food handlers who directly manage food or food contact surfaces like utensils, plates, bowls, and prep benches. It’s suitable for roles such as kitchen hands, cooks, chefs, catering staff, bar and food attendants, and even front-of-house employees who occasionally handle food. You’ll learn how to identify and report potential food safety issues, spot hygiene hazards, and prevent situations that could contaminate food.

Assessment and Certification

All students are required to complete a practical assessment to demonstrate their competency in safe food handling. This includes showing correct hygiene practices, proper use of equipment, and handling of food items in line with current food safety standards.

On successful completion, students will receive a Statement of Attainment for SITXFSA005 – Use Hygienic Practices for Food Safety—a nationally recognised certification that supports employment in a variety of food businesses.

Entry Requirements

• Good internet knowledge and ready access to the internet.
• Able to use a computer and have sound digital literacy skills.
• Reading and writing skills to answer assessment questions. 
• Required to have own device to access the internet and the student learning portal. 

Delivery

This course is delivered mainly by correspondence.

Once you have completed your online assessments successfully, your Trainer will then be in contact via email to organise a day and time for the onsite face to face, one hour practical assessment, delivered in the ITeC Academy training kitchen in Coniston, Wollongong.
